OATMEAL BREAD 
4 c. water
2 c. oatmeal (quick)
3 tbsp. yeast
1 c. warm water
1 tbsp. sugar
2 c. flour
1/2 c. cooking oil
2 tbsp. salt
2/3 c. bran
1/3 c. wheat germ
1 c. brown sugar
9-10 c. flour

Boil 4 cups water; pour over oatmeal and stir. Cover and cool to lukewarm.

Dissolve yeast in 1 cup warm water with 1 tablespoon sugar; set aside. In a large bowl mix oatmeal mixture, yeast, 2 cups flour, cooking oil, salt, bran, wheat germ and brown sugar.

Beat well and continue adding flour (9-10 cups). Add more if needed. Knead about 10 minutes or more until smooth. Cover with plastic and towel and let rise until double.

Punch down and let rise 10 minutes or more and shape into loaves. Brush top of loaves with oil or butter. Bake at 350 degrees for 35-40 minutes.
