GROUND BEEF CHOP SUEY 
6 servings, 3/4 c. chop suey & 2/3 c. rice each
2 c. celery, thin 1" strips
1/2 c. onion, sliced
1 lb. ground beef
1 tbsp. fat or oil
2 tbsp. cornstarch
1 1/2 c. water
1 beef bouillon cube
1/4 c. soy sauce
4 c. cabbage, chopped
4 c. rice, cooked (about 1 1/3 c. uncooked)

Cook celery, onion and ground beef in hot fat in a large fry pan about 5 minutes until meat begins to brown.

Mix cornstarch with water and stir into beef mixture. Add bouillon cube and soy sauce and salt. Cook, stirring constantly, until sauce is thickened and clear. Stir in cabbage. Cook, covered, about 5-10 minutes until cabbage is tender but still firm. Serve on rice. Calories per serving about 370.
