ZUCCHINI BREAD 
2 c. grated zucchini
3 eggs
1 c. oil
3 c. flour
2 c. brown sugar (packed)
1 c. chopped nuts
2 tsp. cinnamon
1 tsp. allspice
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder

Beat eggs until thick and lemon-colored. Gradually beat in sugar. Stir in oil, then zucchini.

Stir together flour, nuts, cinnamon, allspice, salt, baking powder and soda.

Add to egg mixture. Mix only until all ingredients are moistened.

Pour into 2 greased and floured 9 x 5 x 3-inch loaf pans.

Bake at 325°F for approximately 1 hour and 10 minutes.
