MORAVIAN SPICE COOKIES 
4 c. sifted flour
3/4 tsp. baking soda
1/2 tsp. salt
1 tsp. ginger
1 tsp. nutmeg
1/4 c. soft butter
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. cloves
1/2 c. light brown sugar
1 c. light molasses

Sift flour with baking soda, salt and spices; set aside. Beat brown sugar, butter and molasses with wooden spoon, stir in flour mixture. When it gets stiff, mix with hands until combines. Refrigerate 4 hours. Roll out and cut out desired shapes with cookie cutters. Bake at 375 degrees for 6 to 8 minutes. (Roll dough to 1/8 inch thickness.)
