Eye of round roast (4 to 6 lbs) at room temp.
Salt and pepper
Flat beer

Preheat oven to 500 degrees. Place roast on rack, flat side up in a shallow lightly greased pan. Rub well with salt and pepper. Place in oven. Immediately reduce heat to 350 degrees and roast until desired doneness. Baste with flat beer.
