ROAST BEEF FOR THE FRANTIC
HOSTESS
 
1 average size roast, aged prime or rolled rib
Salt and pepper

Preheat oven to 375 degrees. Roast meat, seasoned to taste for 1 hour. Do not add water or cover. Turn off oven. Do not remove roast or open oven door. Forty minutes before serving time, turn oven on again at 375 degrees. Roast will be brown on the outside and rare in the middle.
