SUGAR BUSH WALNUT CAKE 
7 eggs
2 1/4 c. sifted flour (all-purpose)
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. salad oil
3/4 c. cold water
1/2 tsp. cream of tartar
1 tsp. vanilla extract
1 tsp. maple extract or 2 tbsp. maple syrup
2/3 c. finely chopped walnut meats

Separate eggs. Mix flour, sugar, baking powder, salt, oil, water, egg yolks, extracts. Stir in walnuts. Beat egg whites and cream of tartar until very stiff. Fold into batter. Pour into ungreased 10" tube pan. Bake at 325 degrees for 55 minutes then at 350 degrees for 20 minutes. Invert pan. Cool. May store several days.

TOPPING:

1 c. heavy cream
1 tbsp. instant coffee
1 tbsp. sugar

Beat. Place walnut halves on top.
