1 med. potato
1 1/2 box confectioner sugar
1 c. peanut butter

Boil 1 medium potato; let cool. Add 1 to 1 1/2 boxes sugar; mix well. Place on dough board sprinkled with powdered sugar. Roll out dough and then spread on peanut butter. Roll up like a jelly roll. Wrap in wax paper. Chill in refrigerator. After chilled, cut into slices.
