MICROWAVE CREAM PIE FILLING 
3/4 c. sugar
3/8 c. flour
1/4 tsp. salt
3 egg yolks
2 c. milk
1 tbsp. butter
1 tsp. vanilla

In microwave safe bowl or saucepan mix sugar, flour, salt, yolks and milk. Beat with wire whisk until blended. Place in microwave. Put microwave on high for 3 minutes, remove and whisk - cook for another 3 minutes, remove and whisk, cook for another 3 minutes. Remove and whisk until very smooth - add butter and flavoring - add fruit (sliced bananas, coconut, pineapple, cocoa) if using pineapple, drain all of juice off of pineapple and use juice with the milk - whatever it lacks making 2 cups, finish filling with milk to make 2 cups liquid before you start microwaving.

If using cocoa - be sure to mix cocoa with sugar and flour before microwaving. But with everything but cocoa - put in filling after microwaving (pineapple, bananas or coconut). Pour into baked pie shell, top with meringue and bake in oven until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
