MICROWAVE CREAM PIE FILLING | |
3/4 c. sugar 3/8 c. flour 1/4 tsp. salt 3 egg yolks 2 c. milk 1 tbsp. butter 1 tsp. vanilla In microwave safe bowl or saucepan mix sugar, flour, salt, yolks and milk. Beat with wire whisk until blended. Place in microwave. Put microwave on high for 3 minutes, remove and whisk - cook for another 3 minutes, remove and whisk, cook for another 3 minutes. Remove and whisk until very smooth - add butter and flavoring - add fruit (sliced bananas, coconut, pineapple, cocoa) if using pineapple, drain all of juice off of pineapple and use juice with the milk - whatever it lacks making 2 cups, finish filling with milk to make 2 cups liquid before you start microwaving. If using cocoa - be sure to mix cocoa with sugar and flour before microwaving. But with everything but cocoa - put in filling after microwaving (pineapple, bananas or coconut). Pour into baked pie shell, top with meringue and bake in oven until brown. |
