CHICKEN UN WINE | |
5 tbsp. butter 1 onion, sliced 1 tbsp. flour 2 tbsp. brandy 1 bay leaf 1/4 tsp. nutmeg 3 slices bacon, diced 1 broiler or fryer (pieces) 1 tbsp. salt and pepper to taste 2 c. burgundy or dry red wine 2 tbsp. parsley 1 c. fresh mushrooms, sliced and sauteed Melt butter; cook bacon and onion. Remove and brown the chicken. Add wine, brandy and spices. Bake, covered, in a 350 degree oven for 30 minutes or more until tender. Stir in bacon, onions and mushrooms and bake 10-15 minutes longer. Serves 4. |
