SWISS CHOCOLATE PIE
1/2 c. soft butter
3/4 c. sugar (granulated)
2 sq. bitter chocolate
1 tsp. vanilla
2 eggs
Chilled baked pie crust
Whipped cream

Cream butter and sugar well. Blend melted chocolate squares, 1 teaspoon vanilla and 2 eggs. Add these eggs, one at a time, beating each egg 5 minutes with an electric beater.

Pour into chilled pie crust. Chill thoroughly. Cover with "real" whipped cream. Chocolate curls optional. This is delicious!

Swiss Chocolate Pie

My family has been making this for 40 years. YES it has raw eggs in it and NO it has never made anyone sick! We use pasteurized eggs and I've had a family member or two eat an entire pie by themselves! No salmonella ever. We only make this pie on special occasions though. It's kind of a pain beating those eggs in 5 minutes a piece. But it's delicious and the texture and flavor is unlike any chocolate pie you'll have!

4 generations later, and we are still making this recipe. Now I'm teaching my daughters. Perfect!
