POTATO PANCAKES (LATKES) 
4 lg. potatoes, peeled
1 sm. onion
1 egg
2 tbsp. flour
Salt and pepper to taste

Grate potatoes by hand or blender. Add egg. Blend in flour, salt and pepper. Pour from container into a hot pan, making size desired. Fry until golden brown on both sides. Drain on paper towels. Can keep 1 to 2 hours in a 140 degree oven if made ahead. Serve with apple sauce or sour cream. Serves 6-8.
