SWEET AND SAVORY BEANS | |
1 (4 oz.) pkg. sliced, cooked ham 1/2 c. ketchup 1/2 c. dark brown sugar 1/4 c. molasses 3 tbsp. prepared mustard 1/2 tsp. salt 1 (16 oz.) can black-eyed beans, drained 1 (16 oz.) can pinto beans, drained 1 (15 1/2 oz.) can butter beans, drained 1 (15 1/4 to 19 oz.) can red kidney beans, drained 1 (10 oz.) pkg. frozen lima beans 1 sm. onion, minced About 1 hour before serving or early in day: Preheat oven to 350 degrees. Cut ham into 1 1/4 by 1/4 inch strips; set aside. In large bowl, mix ketchup, brown sugar, molasses, mustard, and salt. Add black-eyed beans, pinto beans, butter beans, kidney beans, frozen lima beans, and onion; mix well. Spoon bean mixture into 12 x 8 inch baking dish. Arrange ham strips on top of beans. Cover and bake 40 minutes or until mixture is hot and lima beans are cooked. If not serving right away, cover and refrigerate to serve chilled later. Makes 6 servings. About 495 calories per serving. |
