RICE PUDDING 
3 c. rice (long cooking not minute)
2 1/4 tsp. salt
10 c. water
1 can evaporated milk (12 oz.)
24 oz. regular milk
6 oz. water
3 1/2 c. sugar
2 1/4 tsp. vanilla
Cinnamon

In 6 quart kettle get water boiling, add salt and rice. Stir occasionally until water goes into rice. Add milk, water (6 ounces) and sugar. Simmer until rice is done (until soft pudding consistency). Take off heat. Add 2 1/4 teaspoons vanilla. Sprinkle top with cinnamon and stir in (for flavor). Sprinkle top with cinnamon (for looks). Good hot or cold.
