LINGUINE AND VEGETABLES 
6 oz. uncooked linguine
2 tbsp. butter
2 med. (2 c.) shredded zucchini
1/2 c. shredded carrots
4 oz. (1 c.) shredded Mozzarella cheese
1/2 c. half and half or milk
2 tbsp. dry white wine (optional)
1/2 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. basil leaves

Cook linguine - drain - rinse with hot water.

In large skillet, melt butter. Add zucchini, carrots and onion. Cook over medium heat for 3 minutes stirring occasionally. Add cooked linguine and remaining ingredients. Toss mixture until cheese is melted. Serve immediately.
