CINNAMON CRUNCH COFFEE CAKE | |
2 c. flour 2 1/2 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. salt 1/4 tsp. nutmeg 3/4 c. sugar 1/3 c. shortening 1 c. milk 2 eggs Topping Grease and flour 9x13x2 inch pan. Sift flour, baking powder, cinnamon, salt, nutmeg and sugar together into large mixer bowl. Blend in shortening and milk; beat 1 1/2 minutes. Add eggs; beat 1 minute longer. Pour 1/3 of the batter into pan. Sprinkle half of the topping on batter. Pour remaining batter on topping; sprinkle with remaining topping. Bake 30-40 minutes at 350 degrees. Serves 12. TOPPING: 2/3 c. brown sugar 2 tbsp. flour 2 tbsp. butter 1 c. chopped pecans Combine brown sugar and flour; cut in butter until crumbly. Stir in nuts. |
