FRENCH STYLE GREEN PEAS 
Lettuce leaves
2 c. tender young peas
3 sm. onions, thinly sliced
2 tbsp. minced celery leaves
1 tsp. sugar
1/2 tsp. salt
Dash of black pepper
1/4 c. boiling water
2 tbsp. butter

Line bottom of heavy skillet with moist lettuce leaves. Add peas, onions, celery leaves, seasonings, and boiling water. Cover with additional moist lettuce leaves. Cook, covered over low heat for 5 to 10 minutes or tender. Remove and discard lettuce. Add butter. Cover pan and shake until butter has melted.
