OATMEAL-BLUEBERRY MUFFINS 
2 1/2 c. uncooked quick oats
1/2 c. brown sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1 c. blueberries
2/3 c. skim milk
3 tbsp. vegetable oil
2 egg whites, slightly beaten

Blend oats in a food processor for one minute. Add brown sugar, baking powder, and cinnamon. Pour into a large bowl.
