SWISS GREEN BEANS | |
2 tbsp. butter 2 tbsp. flour 1 tsp. salt 1/4 tsp. pepper 1 tsp. sugar 1/2 grated onion (optional) 1 c. dairy sour cream 2 pkg. French style frozen green beans, cooked 1/2 lb. process Swiss cheese (natural cheese is too stringy) 2 c. corn flakes 2 tbsp. melted butter Melt butter, stir in flour, salt and pepper, sugar and onion. Add sour cream gradually, stirring constantly. Cook over low flame until thickened. Remove from stove. Fold into beans that have been cooked and drained well. Pour into a 1 1/2 quart buttered casserole. Grate or cut up Swiss cheese and place on top or place in layers with beans. Crush corn flakes fine, mix with second 2 tablespoons melted butter. Sprinkle over top of cheese and bake in a 350 degree oven for 20 minutes or until bubbly. This may be prepared the night before except for the crumbs. Sprinkle crumbs over just before placing casserole in oven. Kellogg's corn flake crumbs may be used instead of corn flakes; use 1/2 cup crumbs instead of 2 cups of flakes. |
