SOUR CREAM APPLE COOKIE SQUARES 
2 c. all purpose flour
2 c. packed brown sugar
1/2 c. butter
1 c. chopped nuts
1 tsp. baking soda
1 - 2 tsp. cinnamon
1/2 tsp. salt
1 c. sour cream
1 tsp. vanilla
1 egg
2 c. apples, chopped fine (2-3 med. apples)

Preheat oven to 350 degrees.

In a large bowl, combine first 3 ingredients. Blend at low speed until crumbly. Stir in nuts. Press 2-3 cups of crumb mix firmly on an ungreased 13 x 9 pan. To remaining crumbs, add all other ingredients except apples. Blend well, stir in apples. Spoon batter evenly over crumb base. Bake at 350 degrees for 25-35 minutes until tested comes out clean. If desired, top squares with whipped cream or ice cream, or sprinkle with powdered sugar. Cool and cut into bars.
