FRESH TOMATO CHUTNEY (MICROWAVE) | |
6 plum tomatoes, cut into 8 pieces each (about 3 c.) 1/2 c. golden raisins 3 tbsp. sm. capers, drained 2 tbsp. fresh ginger, finely minced 1 tbs. garlic, finely minced 1 tbsp. crystallized ginger, chopped 3/4 c. granulated sugar 1/2 c. white wine vinegar Pinch of ground allspice Combine all ingredients in a 2 1/2 quart microwave-safe casserole. Cook on high, uncovered, for 8 minutes. Stir. Cook an additional 10- 12 minutes, or until mixture thickens. Cool to room temperature. Cover and refrigerate for no more than 2 days, as the taste is best when freshest. Delicious served with grilled fish, poultry or pork. Yield 2 1/2 cups. Per serving: 100 calories, .14 gram fat, no cholesterol. |
