CRACKLING CORNBREAD 
1 1/2 c. cornmeal
1/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
1 egg
1 c. finely cut crackling or crumbled crisp bacon

Sift together dry ingredients. Add buttermilk and egg stirring until well mixed. Season crackling with additional salt to taste. Fold in last.

Pour batter into very hot, well greased pan or muffin pan. Bake in 450 degree oven for about 25 minutes.
