CATFISH FILLETS 
2 c. cornmeal
1 tsp. salt
1/2 tsp. red pepper
Oil for deep frying
1 c. flour
1 lb. catfish fillets
1 tsp. black pepper

Mix meal, salt, peppers and flour together. Roll catfish in mixture until well coated. Deep fry catfish at 350 degrees for 3 to 4 minutes or until golden brown. Serves 2.
