DIJON CATFISH FILLET 
2 lbs. catfish fillets
2 c. fine cracker crumbs
3/4 c. chopped red onion
4 tbsp. Dijon mustard
1/4 c. olive oil
1/2 c. white wine

Spread each catfish with Dijon mustard. Gently coat with cracker crumbs. Heat oil to 350 degrees. Put fillets in hot oil and cook for 3 minutes. Turn and sprinkle with red onions. Drizzle white wine over fish. Lower heat and cover. Cook fish for 6 minutes. Serve hot.
