RANCHO DRESSING 
1 c. sour cream
2 green onions, chopped
2 tbsp. mayonnaise
3 tbsp. lemon juice
1 1/4 oz. Roquefort cheese (blue cheese is fine)
Salt and pepper to taste

Slice onions, top and all, into the sour cream. Add remaining ingredients and season to taste with salt and pepper. Allow to ripen several hours before serving. This is excellent over wedges of lettuce.
