SLENDERIZED ROQEUFORT DRESSING 
1 c. low-fat cottage cheese
1/2 c. buttermilk
2 tbsp. wine vinegar
2 oz. Roquefort or blue cheese
Salt and freshly ground pepper

Mix cottage cheese, buttermilk and vinegar in blender. Add half blue cheese and mix until smooth. Crumble remaining cheese and stir into dressing with salt and pepper to taste. 1 1/2 cups. A dieter's delight.
