CHRISTMAS DATE NUT CAKES 
This recipe was given to me by my very best friend several years ago and I make it only at Christmas so it's a very special treat for the family!

1 1/2 cups all-purpose flour
1 1/2 cups white sugar
1 tsp. baking powder
1 tsp. salt
1 (8 oz.) jar maraschino cherries, drained
2 lb. chopped walnuts
1 lb. chopped Brazil nuts
2 lb. pitted dates, chopped
5 eggs
1 tsp. vanilla

Preheat oven to 325°F.

Mix dry ingredients in large bowl, add cherries, nuts and dates, mix well to distribute all through flour mixture.

In another bowl beat the eggs until fluffy, add the vanilla and add to flour mixture. Mix all together until well mixed.

Pour into 4 greased mini loaf pans. Bake at 325°F for about 1 hour till done.

Makes 4 mini loaves.
