CHRISTMAS WREATH CAKE 
3 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups raisins
3/4 cups dates, pitted and chopped
1 cup red and green candied cherries
3/4 cups candied pineapple
3/4 chopped nuts (optional)
1/2 cup flaked coconut
1 cup (2 sticks) butter
1 1/4 cups white sugar
1 tsp. lemon zest
2 tsp. lemon juice
4 eggs

Preheat oven to 300°F. Line a tube pan with 2 layers of brown paper and grease well.

In a large bowl whisk together flour, baking powder and salt. Mix in raisins, dates, cherries and pineapple, nuts and coconut. Stir until all fruit is coated.

In another large bowl cream butter with sugar. Add lemon zest, lemon juice and eggs. Mix well. Stir in fruit mixture. Spread batter into prepared pan.

Bake in a slow (300°F) oven for two hours. Cool.
