YAM SOUFFLE 
2 c. cooked, mashed yams
4 to 5 egg whites
1 tbsp. cinnamon
1 tbsp. grated orange peel

Beat the egg whites to soft peak stage. Fold egg whites, cinnamon, and orange peel into the yams. Divide into 4 individual souffle dishes and bake at 350 degrees for 25 minutes. Serve immediately. Serves 4.
