ZUCCHINI SQUARES | |
4 sm. zucchini 1 c. Bisquick 1/2 c. chopped onion 1/2 c. Parmesan cheese 2 tbsp. chopped parsley 1/2 tsp. oregano 1 garlic clove, minced (optional) Dash pepper 1/2 c. oil 4 eggs, slightly beaten Split zucchini lengthwise and slice thinly to have 3-4 cups. In large bowl, combine Bisquick with all other ingredients. Fold in zucchini. Spread in greased 9 x 13 inch pan. Bake at 350 degrees for 40 minutes or until golden. Cut into squares and serve warm. Option: Can be baked in greased 10 inch pie plate 30-40 minutes, or until tester comes out dry. |
