FRESH RHUBARB BREAD 
2 1/2 c. flour
1/2 c. pecans or walnuts, chopped
1 tsp. baking powder
1/4 tsp. nutmeg
1 tsp. baking soda
1 1/4 c. buttermilk
1/2 c. vegetable oil
1 lg. egg
1 c. brown sugar
2 tsp. vanilla
1 1/2 c. rhubarb, coarsely chopped

Mix flour, nuts, baking powder, salt, and nutmeg in large bowl. Dissolve soda in buttermilk. Beat together buttermilk, egg, oil, brown sugar, and vanilla. Stir buttermilk mixture into dry ingredients just until moistened. Batter will be lumpy. Fold in rhubarb. Bake at 350 degrees in 2 greased loaf pans for 45- 50 minutes or until top is golden brown.
