“TACO SALAD” IS IN:
NEXT RECIPE:  TACO SOUP

TACO SALAD 
1 lb. ground beef
1 env. taco seasoning
1 (10 oz.) can kidney beans
1 cup grape tomatoes, halved
1 head lettuce, shredded
1 (12 oz.) pkg. shredded cheddar cheese
1 (12 oz.) bag nacho cheese flavored Doritos, crushed
1 (16 oz.) bottle Italian salad dressing

Brown ground beef and add taco seasoning. Simmer according to directions. Place in large bowl and refrigerate until cool. Add beans, tomatoes, lettuce, cheese, and Doritos. Mix well.

Cover with salad dressing. Mix again. Serve almost immediately.

I make this salad and mix equal parts Catalina dressing and taco sauce. I prefer Doritos, red onion, and black olives. The bowl is scraped empty every time I make it!

I've been making this for years, but I use Western Dressing instead of the Catalinas and Thousand Islands. Western Dressing is kinda hard to find but it does make the difference. TRY IT!!

I use thousand island dressing (can use low fat or fat free) and also replace the pinto/kidney beans with Ranch Style Beans (for a little kick). I also add a few packets of Taco Bell sauce (hot or mild) and onion to the beef/taco seasoning while cooking for an added zing. You can also omit the shredded cheese if using cheesy tortilla chips.

I use salsa to toss mine in (lower calorie too). If you want a creamier "dressing", mix the salsa with some sour cream. Delicious!

This bring back fond memories of one of my favorite dishes. My Mom always made it with Catalina (also an "island") dressing. She added onion (sweet, white, red, or purple will do) and black olives (sliced or whole). The bowl was always wiped out at the church pot lucks (her dishes always were). I am thinking this might be good topped with some fresh chopped cilantro too, will have to try that next time. I liked the idea above to try a good ranch mixed with salsa as a dressing. Yummy stuff!

All i use is...beef, taco seasoning, tomatos, onion, cheese, lettuce, catalina dressing, and doritos! oh and i also add a little bit of jalepeno in there for an extra kick! try it..it's delicious!

I've been making this since I was a kid in the mid 1980's, but I add the sliced black olives and use French dressing instead of Thousand Island and Black beans instead of Kidney. I usually make enough to feed an Army; it's easy to scoop out as an after school snack..or a meal. I prefer it cold, but heated up is good too. This recipe was circulated in the 1950's when my Grandmother was raising my father.
