RICE AND GREEN PEAS 
1 1/2 lbs. fresh green peas
4 c. water with 4 tsp. salt
1 tomato, chopped
1 onion, chopped
1 green pepper, chopped
1/4 tsp. oregano
3 garlic cloves, chopped
1/3 c. tomato sauce
3 1/2 c. rice

In a 4 quart saucepan heat oil at medium heat and add tomato, onion, green pepper, oregano and garlic, simmer for 15 minutes. Then add the green peas and simmer for 10 more minutes. Add rice, water and tomato sauce. Cover and cook on low heat for about 25 minutes until all the water is cooked away. Serve hot with any main dish or meat dish.
