GREEN CHILIES AND CHEESE RICE 
1 lb. box regular rice
2 (4 oz.) cans chopped green chilies
1 1/2 c. sour cream
4 c. grated Monterey Jack cheese
1/2 c. grated sharp Cheddar cheese

Cook rice as directed on box. Blend green chilies and sour cream into rice; then layer rice mixture and grated Jack cheese in a buttered 3-quart casserole dish, ending with cheese. Sprinkle grated Cheddar cheese on top and bake in a 350 degree oven 30 to 40 minutes or until cheese has melted and mixture is hot and bubbling. For a "hotter" dish, use 3 (4 oz.) cans chopped green chilies.
