MEDITERRANEAN SHRIMP 
1 tbsp. olive oil or Pam olive oil spray
2 medium garlic cloves, chopped
2 tbsp. oregano
1 medium tomato, quartered
1/2 can chicken broth
1/4 c. crumbled Feta cheese
1 medium onion, chopped
3 celery stalks, chopped
1 bunch green onions, chopped
1 1/2 lb. medium shrimp, peeled and deveined
2 c. cooked thin spaghetti
juice of 1 lemon

Add olive oil or olive oil spray to large saucepan. Over medium heat, saut onions, garlic and celery until onion is translucent. Add chicken broth for more liquid. Add oregano; cook for 10 minutes. Add tomato, shrimp and cooked spaghetti. Mix until all shrimp and spaghetti is covered with vegetable mixture. Cook for 5 minutes.

Serves 2.

Serve on two plates; sprinkle with 2 tablespoons crumbled Feta cheese, then generously squeeze lemon juice on top. Serve immediately.

On Weight Watchers, each serving is 7 points if Pam is used instead of oil.
