Banana Nut Cake / CM

BANANA NUT CAKE 
3 very ripe bananas, mashed
1 1/2 cups sugar (scant)
1/2 cup non-hydrogenated Crisco or butter, softened
1 tablespoon vegetable oil (optional)
3 eggs
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon banana extract or liqueur (optional)
2 cups flour (minus 2 tablespoons)
1 teaspoon baking soda
4 tablespoons plain or banana yogurt or sour cream
1/2 to 3/4 cup pecans or walnuts, crushed

Preheat oven to 350°F.

In a large mixing bowl, beat butter and sugar for 1 minute.

Add all remaining ingredients except flour and nuts. Beat until well combined, about 2 minutes. Stir in flour until well mixed - but do not mix for more than 90 seconds or the cake may be tough). Stir in nuts.

Turn batter into a 9x5x3-inch greased loaf pan.

Bake for 45-60 minutes or until cake tests done. Reduce heat to 325°F if cake begins to brown too much before center tests done.

Drizzle top of cake with confectioners icing while still warm (optional) or simply brush top with melted butter then sprinkle with sugar.

Spread individual servings with cream cheese just before serving.

Variations: If you make this in the blender/food processor, you can add 1/2 cup sunflower seeds, coarsely chopped. This gives it a coarser texture and may take slightly longer to bake. Sometimes I add dried cranberries or blueberries.

In place of yogurt I added 4 tablespoons of sour cream and 1 tsp. of vanilla along with 1/4 tsp. of maple extract. I also crushed honey roasted peanuts and cashews (1/4 cup) and added them to the batter. Baked the cake in a Bundt pan for 45-60 min and drizzled maple flavored icing over top of cake... Delicious.

We looooved this cake! I didnt use the vegetable oil, didnt have banana extract so I used almond extract, used whole wheat flour and added two tablespoons of organic strawberry jelly. Plain yogurt and pecans was my option! Yum Yum. Thank you!

The Best Banana Nut Cake Ever! I will be using this one again! Did not use the optionals either. I put cream cheese icing on top, 4 oz. unsalted butter, 4 oz. cream cheese, 2 cups confectioners sugar, 1 tsp. vanilla. Beat with mixer on low until smooth, icing cake and topped it off with sprinkles of more walnuts!

Very good but I used unsalted butter and coconut oil and for the sour cream use a few tablespoons of Hellmann's mayo instead. You don't need the banana extract at all just use one extra banana and some lemon juice (1/2 tsp.) and you'll have the best ever banana bread you will ever put in your mouth!

This is the best banana cake I ever had. I threw away my other banana bread recipes. I did change it a bit with the Crisco or butter. I did a quarter cup of each.
Very moist cake, I passed the recipe on to others. Love it! Thanks for sharing.

I wanted a cake, so I actually poured this into an 8x8-inch cake pan and it worked great (baked for about 35 minutes). I did have to use a bigger mixing bowl than I do for banana bread. Thanks for sharing!
