CANDIED SWEET POTATOES OR YAMS 
A favorite Thanksgiving treat!

6 large bright orange sweet potatoes
2 teaspoons salt
1/4 cup white sugar
1 lb. dark brown sugar
1/2 cup (1 stick) butter
2 cups miniature marshmallows

Wash and peel potatoes. Chunk potatoes into 2-inch disks. Put potatoes in a pan and cover with water. Add 2 teaspoons of salt and 1/4 cup of white sugar to the potatoes and water. Cover. Boil until potatoes are fork tender (approximately 30 minutes). Drain potatoes.

Put potatoes in a baking dish and sprinkle with brown sugar. Dot potatoes with butter.

Bake for 20 minutes in 350°F oven. Sprinkle with marshmallows. Return to oven and bake until marshmallows are brown.

I recommend that all men start reading the comments before actually preparing the meal... The vanilla or nutmeg would have been great! Mine turned out fantastic! It was simple to do. I substituted 1/4 cup white sugar for 6 pkts of stevia though. Used this recipe for the office Thanksgiving party. Loved it. Their comment, "Now you're ready to get married!" May have turned out too good. Happy Thanksgiving, Everyone!!! God Bless.

I used this recipe in an attempt to make Yams for the first time...I added very little nutmeg and some cinnamon. I also added white sugar until it was sweet enuff for me...IT WAS GREAT!!! Very easy recipe to follow :)

I had never really made candied yams before but this was super easy and yummy. However, i saw other comments in where people mentioned adding vanilla extract and cinnamon and that made it better!

I use the same recipe but instead of white sugar I use King syrup. The whole family has always loved it. A Thanksgiving and Christmas tradition!!

The only thing I do different is use half the water left from boiling potatoes, add the brown sugar, vanilla, and butter, heat it and pour it over the potatoes then bake them. i just use half pound of brown sugar too. Also if you boil potatoes a little first, they are really easy to peel.

One variation. I fix this every year for Thanksgiving and Christmas. I sprinkle Spice Cake seasoning over the yams then dot with butter and sprinkle with light brown sugar, bake for 20 to 30 minutes at 350°F, remove from oven then cover with marshmallows and bake until golden. Also if using canned yams, if you add 2 tablespoons of Southern Comfort it gives them a very good flavor.

This is almost how I prepare mine... I like to MASH the sweet potatoes before putting them in the baking dish... I add the brown sugar and the butter into the mashed sweet potatoes then I put it in the baking dish... Cover with marshmallows then bake in 350°F oven til marshmallows are browned...

I like to add the Mandarin oranges & pineapple tidbids to this recipe before baking it (also to the brown sugar I add a little spices of nutmeg, cinnamon & ginger mix and sprinkle on the top before baking).

I use this recipe with a few small changes. I add a pinch of cinnamon, 3/4 can of pineapple chunks (well drained) and 1 cup of orange juice. Yummy!
