2 c. flour 2 1/2 tsp. pumpkin pie spice 1/2 tsp. salt 1 tsp. baking soda 1 tsp. baking powder Sift dry ingredients and set aside. Blend: 1 (6 oz.) can frozen orange juice, concentrate 2 eggs Stir the dry ingredients into the juice mixture. Mix well. Add: 1 c. chopped nuts Stir into batter by folding method. Bake in a 9 x 4 inch greased pan at 350 degrees for 35 minutes. This flavorful fruit bread contains no salt or shortening. These ingredients will not be missed because of the spices and tasty fruit additions. Make your own spice mix: 1/2 teaspoon cinnamon, 1/2 teaspoon allspice and 1/2 teaspoon nutmeg. |
