GREEN TOMATO PIE 
3 to 4 green tomatoes (ones starting to turn pink inside are best)
3/4 c. brown sugar
2 tbsp. Minute tapioca
3 oz. cinnamon imperial candies
Pastry for a 2-crust pie

Peel tomatoes and slice thin. Place in bottom crust and sprinkle rest of ingredients on top. Cover with other crust. Sprinkle top crust with sugar/cinnamon mixture. Bake on bottom shelf at 400 degrees for about an hour.

Turn oven down to 350 degrees if crust is getting too brown. Ingredient amounts may have to be adjusted depending on the size of the pan and individual taste. Serve with vanilla ice cream.
