COMPANY CHICKEN 
8 chicken breasts
2 pkg. frozen broccoli spears
2 c. mayonnaise
1 tbsp. curry powder or poultry seasoning
1 can cream of mushroom soup
1 1/2 c. grated cheddar cheese

NOTE: Use curry powder if serving adults. Children seem to like the poultry seasoning better.

Parboil chicken breasts 20 minutes. Cool and debone. Save liquid to cook rice in. Cook broccoli and drain. Mix remaining ingredients except grated cheese. Butter 9 x 12 or larger baking pan. Place broccoli spears, add chicken breasts. Spread the mixture over all. Add the 1 1/2 cups grated cheese over the top. Best when prepared 2-3 days ahead. Cook 30-45 minutes at 350 degrees. Serve with rice or baked potatoes.
