RATATOUILLE 
4 sm. fresh zucchini
4 sm. fresh yellow squash
1 lb. fresh mushrooms
16 oz. can tomatoes
1 can sliced water chestnuts
1 sm. can V-8 juice

Spray large skillet with Pam. Cut up zucchini, squash and mushrooms to desired size. Add tomatoes and water chestnuts. Cover and simmer until tender (about 15 minutes). Season to taste. Serve over rice.
