POTATO CASSEROLE 
32 oz. frozen hash brown potatoes
8 oz. sour cream
2 c. mild Cheddar cheese
1/2 tsp. salt
1 stick butter
1/2 c. chopped onions
1 c. cream of chicken soup
1/2 tsp. pepper
1 box Ritz crackers

Mix all ingredients well and place in baking dish. Cover with 2 cups of Ritz crackers and 1/2 stick of melted butter.

Bake at 350°F for 45 minutes.
