CABBAGE CASSEROLE 
1 medium head cabbage
1 medium onion, chopped
salt and pepper to taste
1/4 cup mayonnaise
1 can cream of mushroom or chicken soup
1 stick butter, melted
1 cup shredded cheddar cheese
1 sleeve Ritz crackers, crushed

Coarsely chop cabbage and put in a 2-3 quart casserole dish or 9 x 13 pan. Chop onion and sprinkle over cabbage. Sprinkle desired amount of salt and pepper over cabbage and onions. Mix mayo and soup together and spread over cabbage. Sprinkle cheese over mayo mixture, then crackers, then melted butter.

Bake at 350°F for 45 minutes until brown and bubbly.
