STUFFED CABBAGE CASSEROLE 
2 lbs. ground chuck, raw
1/2 lb. River Rice, raw
1 stick butter
1 onion, chopped
1 head raw cabbage, chopped
1 can tomato sauce
1 can tomato soup
1 jar sauerkraut

Microwave onion and butter for 2 minutes on high. Add to beef and rice and mix well. Place 1/2 head of chopped cabbage in bottom of 13 x 9 baking dish. Pour 1/2 of sauce over cabbage. Press down meat and rice mixture. Spread rest of cabbage. Spread sauerkraut over cabbage (optional). Pour rest of sauce over top. Cover with foil. Bake for 1 1/2 hours at 350 degrees. Cut into squares. Delicious.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This casserole is so easy to prepare. Delicious and much less prep time required than actual cabbage rolls. A great dish! I will definitely make it again!
