ZUCCHINI SPICES - RED HOTS | |
6 med. zucchini 1 c. pickling lime 1 c. vinegar 1 tbsp. alum 3 tbsp. red food coloring 2 c. vinegar 2 c. water 10 c. sugar 8 cinnamon sticks 1 sm. pkg. red hots Peel zucchini, remove centers and cut into small cubes. Soak overnight in 1 gallon water and 1 cup pickling lime. Stir occasionally. In morning, drain and rinse zucchini well. Soak 4 hours in clear water. Combine 1 cup vinegar, alum, food coloring with enough water to cover. Heat and simmer 2 hours. Make syrup of 2 cups vinegar or 2 cups water, sugar, cinnamon sticks and red hots. Bring to boil. Drain zucchini and pour boiling syrup over. Let sit covered 24 hours. Repeat procedure 2 more times (drain well, reheat syrup and pour over again). On third day, place in jars, cover with boiling syrup and seal jars. Process in boiling bath 15 minutes. |
