SWEET POTATO CASSEROLE | |
2 1/2 lbs. sweet potatoes, cooked and pared (6) 6 tbsp. butter 3 eggs, slightly beaten 1/2 c. sugar 1/2 c. chopped pecans 1/2 c. flaked coconut 1/2 c. orange juice 1/2 tsp. vanilla 1/2 tsp. salt 10 orange slices 10 marshmallows Mash potatoes; stir in butter. Beat in eggs, sugar, pecans, coconut, orange juice, salt, and vanilla. Turn into 1 1/2 quart casserole. Bake, uncovered, at 350 degrees for 30 minutes. Top with orange slices; place 1 marshmallow atop each orange slice. Return to oven until marshmallows are golden brown, 10 minutes or more. |
