SWEET POTATO AND APPLE CASSEROLE 
2 lg. yellow delicious apples
2 lg. sweet potatoes or yams, cooked and peeled
1/2 c. brown sugar
Dash of salt
1/4 tsp. cinnamon
1 tbsp. butter
1/2 c. orange juice
1/2 c. apricot nectar
1 tbsp. cornstarch

Peel apple, core and slice about 1/4 inch thick. Arrange in the bottom of a round 9 inch baking dish. Combine brown sugar, salt and cinnamon and mix well. Sprinkle half the mixture on top of the apples. Arrange potato slices over apples and sprinkle with remaining half of brown sugar mixture. Dot top with butter. Combine orange juice and apricot nectar. Dissolve cornstarch in juice and pour over top. Bake at 375 degrees uncovered for 40 minutes, until apples are tender. Serve hot.
