SWEET POTATO CASSEROLE 
3 tbsp. butter
3/4 tsp. salt
1/4 c. orange juice
3 c. cooked, mashed sweet potatoes
1 (9 oz.) can crushed pineapple, drained
1 tbsp. butter
6 marshmallows, cut in halves

Add 3 tablespoons butter, salt and orange juice to sweeten potatoes. Beat until fluffy and light. Fold in pineapple. Put in 1 quart casserole. Dot with 1 tablespoons butter. Put marshmallows on top. Bake in 350 degree oven until marshmallows are brown. Serves 6. Good with turkey dinner.
