SWEET POTATO PUDDING 
4 lg. sweet potatoes, cooked & mashed
3 eggs, beaten
1 1/2 c. sugar
1/4 c. evaporated milk
3/4 stick butter
1 c. flaked coconut
1 tsp. vanilla
1 tsp. lemon extract
1 sm. can crushed pineapple, undrained
Dash of salt

Mix all ingredients, pour into greased oven proof dish and bake for 1 hour at 350 degrees or until firm. Top with marshmallows and return to oven until brown. Serves about 15 people.
