DOWN ON THE FARM BREAKFAST 
6 slices bacon
1 pkg. Betty Crocker Au Gratin or Scalloped potatoes
1/4 c. chopped green pepper
2 1/4 c. boiling water
2/3 c. milk
Dash freshly ground pepper
2 tbsp. chopped onion
3/4 c. shredded cheddar cheese
6 eggs

Cut bacon into 1/4 inch pieces. Fry or microwave until cooked. Drain, reserving 2 tablespoons of fat placed in a skillet. Stir in the potatoes, sauce mix, green pepper, onion, water, and milk. Heat to boiling, stirring frequently.

Reduce heat. Cover and simmer, stirring occasionally, about 20 minutes. Transfer to a long glass ovensafe serving dish and sprinkle with pepper and cheese. Make 6 indentations with spoon and break eggs into indentations. Cover and bake in a 350 degree oven until the eggs are set.

NOTE: I generally make this ahead of time and freeze at this point. When unexpected overnight guests arrive, it can be thawed overnight and makes a hearty breakfast with little preparation the next morning.

Since microwave ovens vary in power, you may need to adjust your cooking time.
